Minced Turkey Patties

Ingredients...

1lb boneless turkey breast 1 tsp salt 1/2 tsp black pepper ground 2 tbsp coarsely chopped garlic 1 tbsp coarsely chopped ginger 4 tbsp finely chopped spring onion 3 tbsp finely chopped corriander leaves 1 tbsp cornflour 1 egg white 3 tbsp groundnut oil Sauce... 2 tbsp chinese rice wine (or dry sherry) 2 tbsp water 3 tbsp oyster sauce

Instructions...

1) Coarsely chop the turkey breasts in a food processor using pulse. Dont overprocess, it should be like minced beef.

2) Mix in salt, pepper, garlic, ginger, spring onions, corriander, cornflour and egg white. Form the mixture into small round patties about 3" in diameter.

3) Heat a large frying pan and add oil. Fry the patties for about 2 mins on each side until nicely browned. Drain on kitchen paper.

4) Pour off fat from the frying pan then pour in the sauce ingredients. Bring to a simmer and return the patties to warm through. Serve at once.
