Curried Turkey Turnovers

Ingredients...

1 onion, chopped 2 tbsps olive oil 2 sticks celery, chopped 1 red or green pepper, chopped 8-14 oz cooked turkey, chopped about 1 1/2 lb vegetables,raw or cooked e.g. carrots, parsnips, peas, potato, chopped 1 tbsp curry paste 2 tbsps butter salt 8 oz puff pastry 1 egg, beaten

Instructions...

1) Half cook the onion in the oil. Add any raw vegetables and saute them until they brown and soften. Add the cooked vegetables, peas and turkey and mix well. Stir in the curry paste and cook for 30 seconds. Add the butter and salt, then cool.

2) Quarter the pastry and roll out each peice to a large circle about 1/8th" thick. Divide the mixture between the 4 circles. Brush the edges with egg. Fold the pastry over the filling to form a semi circle, crimping the edges together firmly. Rest for 30 mins in fridge.

3) Brush with the egg and bake at 220 C Gas 7 for 15 mins until nicely puffed and well browned.
