Crab Laksa Ingredients... 1/2 quantity Laksa Paste 1 tbsp vegetable oil 100g dried rice or thin wheat noodles 400ml tinned coconut milk 500 ml vegetable stock 450g mixed crab meat 2 tbsps fish sauce 2 tbsps chopped coriander 2 tbsps chopped mint leaves Instructions... 1) cook the noodles as directed on the packet. drain and rinse thoroughly. Set aside. 2) Warm the oil in a deep pan then add the laksa paste. Stir over a moderate heat until it starts to darken a little but be very careful not to let it burn. Add the coconut milk and stock and bring to the boil. 3) Add the crab meat and fish sauce and simmer gently for 5 minutes. 4) Check seasoning then stir in the coriander and mint leaves. 5) To serve divide the noodles between deep bowls then pour over the hot soup. Scatter with a few more chopped herbs if wished. |
