Broccoli and Mushroom stir Fry

Ingredients...

8 oz chestnut mushrooms, wiped 3 tbsps groundnut oil 4 spring onions, chopped 2 large cloves garlic, sliced 8 oz broccoli in bite size pieces 2 tbsps light soy sauce 2 tbsps rice wine or dry sherry

Instructions...

1) Cut the mushrooms into quarters

2) Heat a wok until quite hot then add the oil. Add the spring onions and cook until they wilt and turn dark green, about a minute.

3) Add the garlic and cook for a minute more.

4) Add the brocolli and stir fry for 2 minutes until a vivid green. Add the mushrooms and a little more oil if needed.

5) Fry for two minutes then add the soy sauce and rice wine. Stir fry for 1-2 minutes until the broccoli is tender. season with pepper and serve hot.

6) If you like you can do this without the broccoli and using 1lb of mixed mushrooms e.g. chestnut, oyster, shitake.
